Dairies - Dairy activities
The dairy is both a dairy activity factory and a company for the production of cheese, butter or other milk derivatives, such as ricotta. Although this industry is the oldest in the world, the development of the actual dairy began only in the Middle Ages, and only with the introduction of the centrifugal cream separator (1877) and other machinery for processing milk by-products did industrial dairies flourish.
Typically, the factory includes all the equipment for making cheese from milk. Among the operations carried out there, one of the most important is pasteurization, now accompanied by UHT treatment. The animal milk, delivered by the breeders and transported for processing on tankers, is introduced into the so-called milk chamber, containing the settling/surfacing tanks where it undergoes a pre-treatment of selection, refining and filtering. The water and organic components (for example, whey) are separated and it is separated for the different treatments that will take place in the so-called hot chamber and in the salting room. A dairy factory generally also has suitable spaces for maturing. It requires large quantities of drinking water and produces considerable quantities of waste water, which requires suitable disposal.
